Is there any way to stop/switch off the" checking for updates" feature
when I turn off power to the Xt eg, switch off the ignition,

No, sadly not... 
WLAN is disabled all the time (doing my updates only via GE), nevertheless the Zumo XT is 'Checking for updates' every time i stop my engine!

But I emailed garmin about this and they said they will pass it on to the development team to look at!
I think a lot of people need to report this as a issue as its pointless checking while you are out in the countryside
