I deliberately look for a POI that's in the mapping I see on Basecamp, usually a fuel station, on the road i want to go along and make it a way point so that it's of some use to me rather than a randomly generated one.

Not quite. Sometimes Yes - if you click on a known location, it alloctaes an icon and it knows its name. But it does not necessarily get added as a Waypoint : If the point hasn't been displayed in the lower left pane of Basecamp - along with the troutes and tracks - then it is not a waypoint. Generally items with known location names (town/village naem) are added as Via Points and are shown on the map as icons or larger circles. The nameless points tend to be small black dots and often these are added to the route as shaping points.
If you have the route selected and you then click on a known point, a mini pop-up dialog appears and you have the option to create a waypoint or add the point to the route, and other options. If you choose to add it to the route, it may well add the waypoint to the lower left pane and tag the waypoint to the end of the route. Generally if you just use the insert tool from the icons at the top of the screen, it just adds a route point - via or shaping.
On the XT there is an option to selectively delete favourites. You can also add any number of favourites to a category - make up your own name. That can be done in Basecamp.
Multi - Select the waypoints from the list. Right click one of them and select Open. Click the Categories tab at the top of the dialog box that opens up, and at the bottom, type in your category name and click the + Add categories button.
Any waypoint can belong to any number of categories.
Now when you go to Where To -> Favourites You don't get a long list of waypoints. You get a list of categories that you have named. And each named category displays only the waypoints in that category. But it will not do this unless you have more than a few favourites stored. 12 minimum rings a bell, but don't quote me. I did check it out once but its a while ago.
Unfortunately - if you choose the three bar menu to delete waypoints - it gives the full list. You cannot delete just those within a category. But that organisational structure may make a list of waypoints more manageable.
It is the fore-runner to the Explore's 'collections'.
Personally I just delete them when I am done - they are still there in my various Basecamp datbases if I want them.

Use Basecamp (mainly), MyRouteApp (sometimes), Competent with Tread for XT2, Can use Explore for XT - but it offers nothing that I want !

Yup. Deletion is by selecting one at a time. Categories don't help, and there is no way to sort so using some sort of prefix to associate each Via with a specific trip won't help. I have a handful of Saved addresses that I always want available. To keep them my options are to select all and then scroll through the list unselecting the ones I want to keep, or to delete all and then re-import the handful that I want. Either way, it's a pain.
I will soon be moving to a new house so, while I was looking at this on the XT, I tried to add my new home address as a Saved waypoint. I could not figure out how to do it. I could do it using the Home function but then my home address is clearly identifiable to anyone who gets their hands on my XT. I don't like that so prefer to have just the address as a Saved waypoint. Hints on how to do that would be appreciated.

Create a Waypoint just using the XT screen ?
Quick answer. Search for location. Scroll preview map. Plant flag. Save it.
Here is a more detailed answer :
View the map. Tap the map. The map view will change slightly to one which has a North arrow in the top left. +/- Zoom keys are moved too. Use the N arrow to change the map orientation N at top / Current direction at top / 3D view. I prefer N up for this.
Scroll, zoom the map to find your new location. Zoom right in. Ignore any flags that pop up on the screen when you touch it while doing this, it will diappear the next time you zoom or swipe.
Then tap the screen at your new location to get a blue flag that you want. If you need to move it slightly, tap away from the flag and then tap to try again.
If you tap in the flag itself, that enters the screen where you can save your waypoint ***. Tap the white flag on the menu at the bottom and click 'Save'. You get the opportunity to change the name and add a phone number. Also to add to a category if you want. And joy of joys, you can add one of those white and green symbols. Then cluck the green 'Save' button.
An alternative to scrolling the map is to select Where To ? and use the search facility. (Don't forget the the blue box to the left of the search box can be used to search near a different town - which speeds things up if you are moving a great distance.) Then enter your new street and town. That plants the flag, which you can re-plant. Then save as above.
*** As an aside, if you have turned the GPS receiver off in the navigation menu, the screen that pops up here has a new option at the bottom: Set current location. Useful for checking a simulation of a route.

Turn on XT, when at your desired place like your driveway touch the vehicle icon. Name and save point.

But yes - tapping your bike icon gives you tha opportunity to find out where you are and save it.

This is how I thought is should work but thia save process did not add the entry to the Saved list. I just tried it again and got it to work. I'm still at the old house. I had the XT in my hand when I thought to add the new address.

I do the vehicle tap all the time while riding. Like, "I didn't know there's a restaurant there!" Tap. "Hey! Some place new to check out!" Tap. "Hmm, I should go down that road sometime." Tap.

This reminds me to mention that I put my Home location out on the street because I have a long driveway and the XT can go into a RUT frenzy if it thinks I missed the start of a route.
